Gingerbread Scones

A breakfast delight for all to share!!!

Good morning friends! I wanted to share one of my favorite recipes. My hubby loves scones. I found a recipe in a cookbook several years ago and thought I would give it a try. I don't know why I had never tried making them before. You could easily go through Starbucks and get one with your coffee, but if you are like me early morning weekends are for lounging (at least for a little while) and the last thing I want to do is get dressed and get out of the house early morning.

For some odd reason I thought scones were hard to make

but they are so easy! They are a sweet biscut that only takes about 10 min to make and under 10 minutes to bake and ice. I will give you the gingerbread scone recipe but omiting the spices and adding vanilla or lemon will allow you to change these up. I use a gluten free flour because of my gluten allergy but it will be the same amount of regular all purpose flour for you to substitute. My favorite gluten free all purpose flour is from Betty Crocker. You can find it at Walmart for about $3.

These would be great early Christmas morning. You could easily make up the batter and refrigerate for up to 3 days. I personally haven't tried to freeze the batter, or better yet to make the scones and freeze them but I'm sure it can be done. Most cakes or muffins that are frozen stay moist in the freezer and taste delicious when thawed.

Maison Designs Gingerbread Scone Recipe

The gingerbread scone icing is powdered sugar with milk. I like my icing thicker but you can add more milk to make it thinner to your liking. I also added some vanilla and spice to mine for these scones and I will include that recipe below!

Gingerbread Scone Icing Recipe:

1 cup of powdered sugar

2 Tbsp of Milk or half & half

1/4 tsp of cloves

1/4 tsp cinnamon

Mix all ingredients until smooth

You will want to apply your icing when scones have cooled but if they are still a little warm and your icing is thick you can go ahead and spoon it on top! A nice cup of tea or coffee is the perfect compliment to these gingerbread scones and a great start to your day!
